Peanut Butter Dark Chocolate Apples

This is a super quick, easy, and healthy snack or dessert, or hey it could even be a breakfast! It’s loaded with good-for-you ingredients and really only takes about 5 minutes to make. Since it’s almost Fall and here in St. Louis, it feels a lot like Fall, it is definitely Apple season.  I know a popular apple snack in the fall is Caramel Apples.  These apples will satisfy your sweet tooth, but unlike a caramel apple, they’re not loaded with processed sugar, dairy and who knows what else.  Typically I’m a red apple fan, but the green apples caught my eye at the grocery store so I decided to switch things up.  I think this recipe would be delicious with a Gala, Fuji, or a yummy Honey Crisp apple as well.

Ingredients:

Peanut Butter Dark Chocolate Apples

1 Organic Green Apple (or try your favorite apple)

Organic Peanut Butter (I used Trader Joe’s crunchy unsalted peanut butter. Any variety will do, but look for ones made with just organic roasted peanuts and no added sugar, syrup, or unpronounceable ingredients)

Dairy Free Dark Chocolate (I used two of these Nib Mor brand single serve chocolate squares.)

Handful of Chopped Walnuts, or another nut

Instructions:

Begin by melting the dark chocolate on low heat on the stove.  This should just take a couple of minutes.

Meanwhile core and slice the apple into wedges.

Spread each apple slice liberally with as much peanut butter as you like. You can use Sunflower or Soy Butter if you have a nut allergy.

Top with chopped walnuts, or another nut of your choice.  Optional to use granola instead of nuts.

Once the chocolate is melted, drizzle over the apple slices.

Serve and enjoy!
